The aroma that fills your home from the "wassail pot" as thisdrink festively brews, is soinviting. This is a non-spiked, trimming toddy - a medicinal drink that is good for what ailsyou. Each ingredient contributes to your Holiday health – or drink it all year long just becauseit is so goooood!

  1. Put cranberries, cinnamon sticks, cloves, and star anise (if using) into a large pot andcover with 1 ½ quarts of water.
  2. Place a lidon the pot and bring to a rolling boilover medium-high heat. Turn the heatdown to a gentle simmer and brew for 1 hour while you become completely intoxicatedwith the "heart and home"-warming aroma.
  3. Fit a 2-quart jar or large jug with a circle of fine cheesecloth, tying it over the mouthofthe jar, or insert a funnel-type coffee filter into the mouth of the jar. (Iusethepermanent filter from my coffee maker for this.) Using a ladle, scoop the spicy mixtureinto your filter to strain it in the jar.
  4. Occasionally, you might need to swish things around in your filter and maybe evenremove some of the wassail mush to get all the liquid through.
  5. Remove the filter and addvery hot water to top of the jar. Add stevia and orangeextract (or essentialorange oil). Stir very welland taste... adjust the flavorings to “ownit”!
