Cuffin Muffin – Single Serve (S)
The recipe for the “Cuffin Muffin” can be found on the package of the Trim Healthy Mama Cuffin Mixes. They come in 2 delicious flavors of chocolate and cinnamon spice. Be sure to read the Recipe Notes below for a Fuel Pull version of this recipe! What is a Cuffin? It’s a cake or a muffin. In nursery rhyme terms… it won’t turn you into a “puffin.” But it will make you feel a “stuffin.” It sure tastes naughty. It’s texture is soft and decadent like something from a bad-for-your-bod bakery. It’s not dense and whole wheatyish, but surprisingly packs more fiber in each yummy bite than health guru bran bricks. Don’t let the moist, melty magic moment of Cuffin-partaking impart any feelings of guilt. Cuffing should a Purist property even though they are a Drive Thru Sue’s cup of tea. Combining a wonderfully balanced amino acid profile, including healing glycine, these rich-in-protein bakery delights whip up as soon as you can say “Trim Healthy Mama.”
  1. Using a fork, combine the dry mix with the egg, extra virgin coconut oil and the water in a microwave safe mug or small bowl until combined.
  2. Microwave for 85-90 seconds or bake for 12 minutes in a 350 degree oven.
  3. Slice and frost or top with butter.
Recipe Notes

Fuel Pull (FP) Version Cuffin Muffin:

Sub two egg whites for the whole egg and use just 1 teaspoon of coconut oil, or you could leave out the oil.

Baking Suggestions:

– You can add water to the other empty muffin holes for a steam effect while baking.
– If using oven version, 1/2 serving, (1 muffin) is suitable for a dessert after an S meal.You can enjoy 2 muffins (full serving) for breakfast or an afternoon snack.

“Pearls Ultra Sweet Topping” for the “Single Serve~ Cuffin Muffin”

– 2 tsp peanut butter
– 2 tsp cream
– 2 tsp THM Gentle Sweet

1. Mix together with a fork or spoon and spread or dollop over your muffin.
