Luscious Lemon Cake (S)

PEARL CHATS: Of all our single-serve cakes, this might have to take first place as my favorite. It is so fluffy and buttery (even though it does not have a lot of butter), and the crumb resembles that of a boxed cake. It has that perfect balance of sweet and tangy. Super Sweet Blend works well in this particular cake as it offsets the tartness of the lemon, so that is great if you are on a tight budget. But if you are a loyal Gentle Sweet user, just double up on the amount called for. To Serene’s dismay, I actually prefer the microwave version. This recipe is in the “Sweet Treats – Quick Single-Serve Cakes” section of the Trim Healthy Mama Cookbook, page 289.

Ingredients
For the Cake
For the Glosting
  • 1tsp butter(softened)
  • 2tsp cream cheese(2 or 3 tsp)
  • 1tsp TH Gentle Sweet(1 to 1.5 tsp Gentle Sweet, or 1/2 to 3/4 tsp ground Super Sweet Blend)
  • 1tsp lemon juice(1 to 2 tsp – or more, if you are a lemon freak)
Instructions
For the Cake
  1. Preheat the oven to 375°F if using it to bake the cake.
  2. Make the cake. In a small greased microwave-safe/oven-safe glass dish, beat the egg well with a fork, then add the remaining ingredients and stir well. Microwave for 1 minute 20 seconds or bake for 15 minutes, or until top is just done.
For the Glosting
  1. Mix the butter and cream cheese with a fork in a small bowl until smooth, then add the sweetener and lemon juice.
  2. Pour the glosting onto the top of the still warm cake and get your fork – be ready to enjoy!
