You’ll notice this soup calls for ITO EN green tea (a blend of sencha and matcha). Don’t freak out at the strange name. I buy this tea at Costco and have even spied it at Walmart. And if you can’t find it in a store, it is very easily found online. The flavor of this tea is divine, very bright tasting without a lot of bitter tannin taste, and it brews up into a vibrant, almost lime green color. While it does have a little caffeine (you can do my cold brew method if you don’t want caffeine), I do a regular hot brew for this and my kids still sleep well at bedtime. But the choice is yours. It will be the topic of conversation at hip luncheons or potluck parties, and it brings a fresh new taste sensation to the family table.
