Instructions

  1. Put all the ingredients (except the feta and eggs) in a large bowl. Stir super well to combine all the flavors. Add the crumbled feta and crumbled hard-boiled eggs and stir well again. Who knew cabbage salad was this good!

You already have protein with the egg, so just add a couple pieces of buttered Wonderful White Blender Bread (page 242) on the side, or put protein-rich Kickin’ Dippin’ Sauce (page 518) on the side. There are so many ways to enjoy this salad.

NOTE:

You can use 2 tablespoons of MCT oil plus 2 tablespoons of extra-virgin olive oil instead. Or if you don’t have MCT oil, use avocado oil.
