Thai-Kissed Cucumber Salad

It is delicious served fresh and even better as it keeps. This is a family-serve recipe that feeds 6 to 8 people. (Halve if your family is smaller.) - If the cucumbers are nonorganic, peel them. If they’re organic, take a fork and scrape down the sides of your cucumber to make a pretty pattern. Slice them crosswise ¹⁄8 inch thick (thinner makes them soggy after a day or two in the fridge). Lay the cucumber slices in a single layer on paper towels and cover them with a layer of paper towels. Leave them for 20 minutes so the towels can soak up the extra water.

Meanwhile, put the bell pepper and onion slices in a large bowl and toss them with the rice vinegar, Gentle Sweet, sesame oil, sesame seeds, ginger, garlic powder, and pepper flakes (if using).

- After the cucumbers have drained for 20 minutes, add them to the bowl and toss well to coat with the dressing. Add 1 teaspoon of the salt. Taste and add more if needed or splash in a little soy sauce (if using). Delicious to serve fresh and even better as it keeps.
