Coarsely chop the ginger and place it in a blender with the 2 cups water. Blend on low for 30 seconds to 1 minute. (Do not blend on too high a speed as the ginger fiber will become emulsified into the water.)

Strain the ginger juice through a fine-mesh sieve into a bowl and squeeze the ginger mash in your hands above the sieve to get every dreg of the medicinal juice. (If you don’t want to use your hands, then just press the ginger with the back of a large spoon while it is in the sieve, but not too hard as you don’t want to force any fiber through the mesh.) If this sounds complicated, it is not, it is simple and quick.

Now pour your ginger juice into a quart jar and add the lemon juice and stevia and stir. Add ice to the top of the jar and a little additional water if needed. Taste and adjust the flavors to “own it.” It should grab your throat. Do you need more lemon? A touch more sweet? Get to feelin’ better, Mama.
