Description

It would be a great idea to make up large batches of this "rice" and store it in the freezer. Great under many dishes. This is a family serve recipe that makes about 6 servings, but if you are the only one going to eat it, make the full batch and freeze other portions in baggies. Instructions

  1. Lightly steam cauliflower (either fresh or frozen).
  2. Place on chopping board and chop into small rice-sized pieces (doesn’t matter if some are slightly bigger). Or, use food processor to obtain correct size. Don’t over process or you’ll have mashed cauliflower.
  3. Add butter or a swirl of coconut oil, or chicken broth, and salt and pepper to taste.

  4. INSTRUCTIONS FROM TRIM HEALTHY TABLE
  5. Spray a large skillet with coconut oil (for an FP), or heat the coconut oil or butter (for an S). Add the riced cauliflower, season with salt and pepper to taste, and sauté until tender.

"Whenever you would ordinarily pair rice with a dish – you can use this. It’s perfect under so many main dishes, especially creamy or spicy chicken dishes made in the crockpot. You can keep the rice FP with just a spritz of coconut oil or sauté it up in more generous coconut oil or butter."
