Put ½ cup of the milk into a small saucepan over medium heat. As it warms, add the gelatin, whisking as the milk comes almost to a boil. Remove from the heat. (If you are using coconut oil or butter, add to the hot milk to soften; if using MCT oil, this is not necessary.)

Put the remaining 1½ cups milk and the remaining ingredients, including the MCT oil (if using), in a blender. Add the hot milk and blend well.

Pour the mixture into 2 snack-size jars or 4 very small containers, then refrigerate to chill and firm up. Give the puddings a little stir after 1 hour if you think about it; that will disperse any froth or bubbles that might be trying to set at the top.

"The ultra-budget-saving way to make this pudding is to leave out the Integral Collagen. It’s not truly a pudding full of all glycine’s glory that way, but, hey, it’s got some there in the gelatin itself. The pudding will still be yummy and do your body plenty of good. If using the pudding as a snack or dessert instead of a breakfast, tight-budget Mamas might also use just 1 scoop of collagen instead of 2. You can “S it up” if desired with an added tablespoon of raw, pastured cream or heavy cream. Feel free to add 1 tablespoon unsweetened cocoa powder for a chocolate version; however, more sweetener will be needed."
