Instructions

  1. Whisk together all the food ingredients in a bowl. Allow the batter to sit for a few minutes.
  2. Heat a stovetop or electric griddle to 275°F (low/medium) and coat lightly with coconut oil spray.
  3. Put 2 rounded tablespoons of batter on the heated griddle and immediately spread it as thin as possible, using circular motions with your spoon until it resembles the shape of a wrap or a medium-size tortilla.
  4. Cook, turning over after the first side is golden, and continuing to cook the other side until very lightly golden.
  5. Continue to make more wraps until the batter is used up.

Intro continued...Remember the mantra we taught you - never adapt! These require only two main ingredients - Psyllium husk (whole flakes), which is a pure fiber and neither an S or E fuel, and egg whites (the carton kind makes things easier). Don't purchase the fine psyllium you can buy in a pharmacy that is flavored (like orange), or that has aspartame in it. Psyllium husk, whole flakes, are available at www.trimhealthymama.com or your local health food store.

"These wraps can revolutionize your food world. They’re a great choice for purists who don’t want to use any Frankenfoods, or low-carb wraps from the store, but they’re easy enough for any Drive Thru Sue to master.

It’s a great idea to make up the family-sized batch every week and keep them in your fridge (put teenagers or older children on this job – we have teens who are better than us at this now).  Wonder Wraps make a fast, no think lunch for home or to take to work and are sturdy enough to hold up well when stuffed with meats and veggies. They can be as simple and quick as stuffing them with avocado and tomato or they can morph into other wonderful creations like Wonder Fish Tacos,  Enchilada Wonder Casserole, or Wonderwrapful Lasagna .

Don’t give up if you (or your teen) messes up a little on your first attempt making these... practice makes perfect.  The key is to spread them out as thinly as you can on your griddle with the back of your spoon. Don’t keep them thick or they’ll be like rubber wraps and nobody wants that.
