Instructions

  1. Put 2 cups cooked chana dahl in food processor (make sure it has cooled since cooking).
  2. Add ½ cup tahini (sesame seed paste).
  3. Add 1 tsp. sea salt, garlic powder to taste, lemon juice to taste (approximately 2 lemon’s worth or similar amount of concentrate), and an optional 1 tsp. each of cumin and coriander powder.
  4. Process well. A little water may be added to arrive at desired consistency. The dip can stay very thick, but is also fine to be thinner with added water.
  5. Taste and re-season if needed by adding more salt, garlic powder, or lemon juice to satisfaction.
  6. Transfer to plastic tub with lid. Before covering, drizzle with extra virgin olive oil, sprinkle with paprika powder, and add a sprig of parsley for garnish (if desired). Place lid on and refrigerate
