White Bean Mashies

This recipe is included in our vegetable dishes section of the book. Why? Because, if no one sees you cooking it, they might not believe these "mashies" are not real mashed potatoes. "Mashies" are delectable with Basic Gravy made E style and drizzled on top. A family favorite around our house.

Instructions

  1. Soak white beans overnight. Our favorite is baby limas as they are ultra creamy when cooked.
  2. Pour off water, add fresh water, and cook until over-tender.
  3. Pour beans through colander to drain water
  4. Place in food processor and process until creamy and smooth. If you are feeding a big family, do it in batches.
  5. Add sea salt and black pepper to taste.
  6. Add optional butter. The tiny amount you will eat in your serving will not affect your E fat limit.

Note

Make with chana dahl if you want to really "dig in" to this dish, although you would now have "golden mashies". Chana dahl has very little effect on insulin levels.
