Cut zucchinis lengthwise and scoop out seedy middle part

Par-bake the zucchinis at 400 degrees for around 10 minutes.

Take zucchinis out and stuff centers with diced tomatoes, cheese, green onions, and bacon bits (we use turkey bacon bits). Or, to make this side dish into a main course, add leftover cooked ground beef.

Bake for another 10–15 minutes at 400.
