All-Purpose Batter

This is a great batter mix to keep on hand in an airtight container. You can do so much with it in the kitchen. Mix all ingredients (except eggs) together and store in a plastic container or glass jar (be sure to label it!)

When ready to use your mix, crack the two eggs over chicken, fish, shrimp or veggies (such as zucchini rounds).

Shake off egg a piece at a time and dredge through batter mix.

You can also mix your eggs in a bowl and dunk each piece into it one at a time, if you prefer.

Saute in coconut oil until golden brown.
Note
*For seafood add two packets of True Lemon to batter mix for an extra kick.
