Instructions

  1. Smear four Light Rye Wasa Crackers with two light Laughing Cow Cheese Wedges
  2. Top with turkey breast, cucumber &/or tomato slices and sprinkle with sea salt, pepper and optional red pepper.

Serving Suggestions

Rye is an excellent, slow burning grain in the body that does not raise blood sugar as fast as many other grains. Ryvita Crackers are another good option if you can find those at your local stores.

For added protein I paired this lunch with my own home made chocolate milk - so easy. Just put one cup unsweetened almond milk in the blender, add 1 Tbs cocoa powder, 1 scoop whey protein and a few shakes of stevia extract powder. Whiz for a few seconds - done.

If you're purist-minded and don't like the idea of the Light Laughing Cow cheese, you can sub 1 Tbsp low-fat cottage cheese, Greek yogurt, or homemade cultured cheese made from skim milk. Add Pearl’s Slimming Chocolate Milk recipe and you’ve got a well-rounded lunch.
