Intro Continued....... A couple of fried eggs look so measly on my eagerly awaiting large and lonely breakfast plate, so I created this egg breakfast for big eating! It helps me get back to my prebaby body very quickly after pregnancies, so I sometimes make a Crossover out of it by adding a piece of fruit or slice or two of bread so I don’t go underweight. This is loaded with nonstarchy veggies. You really need to eat more of those in the morning, and here’s a scrumptious way to do it. I love the way I feel so super satisfied without the heavy Jabba the Hutt feeling I get when I don’t balance my meals with some nonstarchies. Don’t scrimp on your veggies in this breakfast. They cook down, so you’ll want to start with a cutting board full of them and, although not mandatory, try to include kale, which is a leafy green low in oxalates. It is important to chop any veggies other than spinach or kale very fine, as they cook much more quickly that way and add more moist succulence.
