Ingredients
    For the Cake
  • coconut oil cooking spray
  • 1 1/2 cups TH Baking Blend
  • 1/4 cup TH Pristine Protein Powder
  • 1/3 cup unsweetened coconut flakes (shredded)
  • 1/3 cup walnuts (chopped)
  • 3/4 cup TH Gentle Sweet
  • 2 tsp cinnamon (ground)
  • 1 tsp nutmeg (grated)
  • 1/2 tsp allspice (1/2 to 3/4 teaspoon ground allspice;optional)
  • 1/4 tsp TH Mineral Salt
  • 2 tsp aluminum-free baking powder
  • 3 large eggs (lightly beaten)
  • 1/3 cup extra virgin coconut oil
  • 3/4 cup unsweetened almond milk
  • 1 1/2 cups carrots (grated; grated on the finest grating option, usually 2 small to medium carrots)
    • For the Deluxe Frosting
  • 4 oz 1/3 less fat cream cheese
  • 4 Tbs butter (1/2 stick; softened)
  • 1/3 cup TH Gentle Sweet
  • 1/2 tsp TH Natural Burst Vanilla Extract
Instructions

    Preheat the oven to 350°F. Spray an 8-inch square cake pan with coconut oil.

    Whisk together the Baking Blend, whey protein, coconut, walnuts, sweetener, spices, salt, and baking powder. Add the beaten eggs, egg whites, coconut oil, almond milk, and carrots and stir well.

    Pour the batter into the prepared pan and bake for 40 to 45 minutes, until the top of the cake is no longer soggy. Let cool.

    Make the frosting. Beat or whisk the ingredients together. Frost the cake once cooled.
