For The Cookies

1/3 banana (use a 1/3 of a banana smashed up)
1/4 cup unsweetened almond milk (or unsweetened cashew milk)
1/3 cup oat flour
1 pinch TH Mineral Salt (1-2 pinches)
2 Tbs unsweetened cocoa powder
2 Tbs TH Gentle Sweet
1/2 tsp aluminum-free baking powder
2 Tbs TH Optimized Plant Protein (2-3 Tbs; use 3 Tbs for 15 grams of protein)

For The Peanut Butter Filling

1/4 cup TH Peanut Flour
1/2 Tbs TH Gentle Sweet
1 pinch TH Mineral Salt
1 1/2 Tbs unsweetened almond milk (or unsweetened cashew milk)

Instructions

Preheat oven to 350.

Add all cookie ingredients into a bowl and whisk together. Divide batter in half and place each half onto a lined baking sheet. Using a spoon, spread the cookies out into large cookie shapes.

Bake for 15 minutes.

After the cookies have cooled a little bit make the Peanut Butter Filling by adding all the ingredients to a small bowl and stirring very well with a spoon.

Spread the filling on one cookie and place the other cookie on top, and that’s all there is to it! Enjoy!
