24 Mini Buns (You Can Halve Recipe If Desired)

Ingredients

For the Dough

2 large eggs
2/3 cup egg whites (carton or fresh)
2/3 cup unsweetened almond milk
1/4 cup TH Super Sweet Blend
1 1/2 cup TH Baking Blend
2 tsp aluminum-free baking powder
1/2 tsp baking soda

For the Cinnamon Swirl

1/4 cup TH Gentle Sweet
2 Tbs cinnamon (ground)
4 Tbs butter (1/2 stick)
1 tsp blackstrap molasses (optional for the brown sugar effect)

For the Frosting

4 Tbs butter (1/2 stick)
6 Tbs 1/3 less fat cream cheese
5 Tbs TH Gentle Sweet
1 1/2 tsp TH Natural Burst Vanilla Extract (pure)

Instructions

Preheat the oven to 375°F. Grease 24 cups of 2 standard muffin tins.

Make the dough. Mix together all the ingredients in a large bowl. Spread 1 tablespoon of dough into each of the 24 muffin cups.

Make the cinnamon swirl. Mix all the ingredients together. If it’s too stiff, add just a teaspoon of hot water and stir so that it is thick, but can be scooped out with a measuring spoon. Drop ½ teaspoon of cinnamon swirl onto each muffin cup and give it a little swirl into the dough with a knife. Don’t overmix it.

Bake for 10 minutes. Cool slightly on a wire rack.

Meanwhile, make the frosting. Mix together all the ingredients with a fork until there are no lumps.

Spread the frosting all over the warm cinnamon buns.
