Cranberry Orange Relish

This is a Trim Healthy Mama Featured Recipe! This is a fabulous way to jazz up your E meals during cranberry season and fortify your immune system at the same time. Serve this festive dish with any lean meat. Boring old chicken breast can become something exciting when diced up and mixed with this relish. It works wonderfully as a topping on fish or leave out the jalapenos and top your Trim Healthy Pancakes with it.

With a grater or zester, remove just the bright orange zest off of the orange.

Set zest aside. Peel the white, pith part of the orange off and discard.

Place orange, orange zest and all other ingredients into a food processor. Pulse several times until desired consistency is reached.

Don’t completely process but do break the ingredients up into very small pieces.

Chill for 30 minutes before serving to allow flavors to blend.

This should provide several servings.

Serving Suggestions:
If you like the bitter taste of the pith, you can leave the zest on and just quarter your orange and put it in the food processor, peal and all.
You can substitute the orange in this recipe for other fruits such as apple, peach or pear for a different flavor combination.
Leaving out the pepper and cilantro would make for more of a dessert relish to be used on Greek Yogurt or as a topping on Trim Healthy Pancakes.
