You’ll notice the groats need to be sprouted for this recipe. Don’t freak out. Sprouting is super easy. Soak them in water overnight, drain in a colander in the morning and rinse away the slimy starch water. Leave the groats in the colander and place on a dinner plate to collect the water. Rinse again in the evening and again the next morning. It is ready when the tails emerge a little way. It does not taste good with long tangled tails, so stop sprouting before they get too long.

Once your buckwheat sprouts are ready, place them in a large bowl and add 1 tsp of ground flax or chia meal per cup to the bowl. This seed meal will combine with the moistness of the sprouts and allow the flavors that you are about to add to stick nicely. The 1 tsp of ground flax or chia meal will not exceed your E meal fat guidelines.

Add stevia extract or sweet blend, add cinnamon to taste, (lowers blood sugar), sea salt, vanilla, optional favorite organic grade essential oils and optional unsweetened, low glycemic dried fruit like cranberries or goji berries.

Do not add any additional coconut oil like the original S-helper recipe calls for in the book, as Cup-O-Crunch is a pure E version.

Dry until crispy, which is usually overnight. Place cereal mixture in a thin layer on dehydrator trays, or use your oven on the lowest setting, and spread into a thin layer on cookie sheets.
