Eggatable Scramble

We know we have gone beyond what is funny with regard to putting two words together to make a title name, never the less… it still pleases us. “Eggatable Scramble” is so much more fun to say than boring old, “Vegetable and Egg Scramble". Since this is not a boring recipe, it should not have a boring name. This recipe is found in the "Sunrise Eats - Good Morning, Eggs" section of our Trim Healthy Mama Cookbook. page 242. This is a single-serve recipe.

1 Single Serve Recipe

Ingredients
  • 1/2 cup egg white (s)
  • 1 Tbs Parmesan cheese (finely grated)
  • TH Mineral Salt
  • black pepper
  • 1/3 tsp onion powder
  • 2 tsp TH Nutritional Yeast
  • coconut oil spray
  • 1/2 tomato (s) (diced)
  • 1/2 bell pepper (s) (cored, seeded, and diced)
  • 1/2 cup button mushrooms (sliced)
Instructions

    Whisk the egg whites with the Parmesan, salt and pepper, onion powder, and nutritional yeast in a small bowl until light and fluffy.

    Coat a small skillet with coconut oil cooking spray and set it over medium-high heat. Put the tomato, pepper, and mushrooms in the skillet and toss for a couple of minutes. Add the egg mixture and toss together with the vegetables until the whites firm up, 3 to 5 minutes.
