DF (if using coconut oil instead of butter in the muffin and choosing a different topping instead of the frosting)
NSI (if using a store-bought, on-plan sweetener)
None of these ingredients are hard to find. Most grocery stores sell golden flax meal or almond flour in their gluten free aisles. Or, grind your own meal from seeds if you’re frugal.
Ramekin Option: Bake at 350 for 10-15 minutes, until no longer gooey on top.
Waffle Iron Option: Pour mixture onto iron and cook until done.
Muffin Tray Option: Fill two holes with mixture and remaining holes with water; bake at 350 for 10-15 minutes.
