Multiple Serve Cake

Ingredients
    For the Topping
  • 2 Tbs TH Baking Blend
  • 1 tsp cinnamon (ground)
  • 1/3 cup walnuts (or pecans, finely chopped)
  • 2 Tbs butter (very rounded) (softened or melted) (or coconut oil)
  • 2 tsp TH Super Sweet Blend (or 1/4 cup erythritol)
  • 1/2 tsp blackstrap molasses (optional)
    • For the Cake
  • coconut oil spray
  • 1/4 cup old fashioned rolled oats (ground into flour in blender)
  • 1 1/4 cup TH Baking Blend
  • 1/2 cup TH Gentle Sweet
  • 4 doonks TH Pure Stevia Extract Powder
  • 1 1/2 tsp aluminum-free baking powder
  • 1/4 tsp baking soda
  • 2 tsp cinnamon (ground)
  • 2 large eggs
  • 1/2 cup egg whites
  • 1/2 cup 0% Greek yogurt
  • 1 tsp TH Natural Burst Vanilla Extract
  • 1/2 cup butter (melted) (or coconut oil)
  • 1/3 cup water (or unsweetened almond or cashew milk)
    • For the Glaze
  • 2 Tbs 1/3 less fat cream cheese
  • 1 Tbs butter (room temp)
  • 1 Tbs unsweetened almond milk (plus 1 tsp) (or cashew milk or water)
  • 4 tsp TH Gentle Sweet
  • 1/2 tsp TH Natural Burst Vanilla Extract

    Make the topping. In a small bowl, combine the ingredients for the topping with your hands so you end up with small crumbs or pulse in a food processor. Set aside.

    Preheat the oven to 350°F. Lightly coat a 7 × 9-inch or 8-inch square baking pan with the coconut oil spray.

    Make the cake. Place the oat flour in a large mixing bowl and add all the other cake ingredients, whisking well. Pour the batter into the prepared pan, then sprinkle on the topping. Bake for 35 to 40 minutes, or until golden brown on top.

    Make the glaze. In a small bowl, whisk together the cream cheese, butter, and 1 teaspoon of the milk or water. Whisk until completely smooth, then add the remaining tablespoon of milk or water. Whisk again, then add the sweetener and vanilla. Stir well. Drizzle this glaze over the still-warm cake in its dish in a random fashion.
