Here’s another great recipe from Gwen Brown, who has an awesome blog full of delicious THM recipes at www.Gwens-Nest.com. Enjoying this muffin for breakfast is one of Gwen’s favorite ways to start her day and part of the reason she lost 45 pounds to get to goal weight. She pairs it with stevia-sweetened Greek yogurt mixed with fresh lemon juice and the berry syrup on her blog, which is similar to our Slim Belly Jelly (page 478), but made with the minimum amount of gluccie. Both coconut flour and golden flax meal are easily found, rather inexpensively, at most grocery stores these days, so go ahead and give this a try. This recipe is in the "Sweet Treats - Quick Single Muffin" section of the Trim Healthy Mama Cookbook, page 278. Makes 1 large "muffin in a mug" or 2 smaller muffins in the oven.
