Hello Cheese (FP)
The taste for a good ol' slice of cheese is like a natural inborn instinct. It's one of natures yummiest gifts, yet many have had to bid it farewell because of dairy sensitivities. We wanted our dairy-free mama's to be able to say hello to an old friend. Now you can enjoy the cheese taste and satisfaction, but keep the door shut to inferior substitutes and processed junk. Here is a cheese that is suitable for most allergen-free diets (although it does contain a tiny bit of almond flour) and is high in satiating and cleansing fiber and rich in the amino acid glycine, which is frequently missing in modern diets. This recipe is found in the "Condiments and Extras" section of the Trim Healthy Mama Cookbook, page 487.

  1. Heat the water until almost boiling in a saucepan over high heat, then add the agar. Whisk well while bringing to a boil. Reduce the heat to low and whisk again for 30 seconds. Add the Baking Blend and bring back to a boil, and whisk well for another 30 seconds to 1 minute. Turn off the heat and add all the other ingredients, whisking well another 30 seconds to 1 minute.
  2. Use a spatula to transfer the mixture to a container with a lid and let cool. Place in the refrigerator to chill and set. Once set, cover the cheese so the edges do not harden.
Recipe Notes

For an even lower-calorie option so that you can use more for FPs or Es, limit the tahini and sesame oil to 1 teaspoon each. It’s still good this way.
