Place the celery and onion in a small saucepan with 2 tablespoons water, cover, and bring to a boil over medium-high heat. Reduce the heat and simmer the veggies until they are tender.

Add the remaining ½ cup water to the saucepan; turn to high heat. When almost boiling, add the agar powder and whisk extremely well while bringing back to a boil. Reduce the heat slightly and whisk well for 30 seconds. Add the Baking Blend and keep whisking for another 30 seconds.

Turn off the heat. Add the remaining ingredients to the saucepan, then use a spatula to scrape the mixture into a blender. Blend until smooth.

Pour the cheesy mixture into a container and allow to cool. Put in the refrigerator to chill and set, then cover the container so the edges of the cheese do not harden.
