This recipe is Pearl's quick version of the icing for the Special Occasion Chocolate Cake. This recipe can be found on Page 386.

Ingredients
  • 3/4 cup butter (unsalted, softened, equal to 12 Tbs)
  • 1 oz unsweetened baking chocolate (1-2 squares, melted or substitute 1/4 cup cocoa powder)
  • 5 tsp TH Super Sweet Blend (5-6 tsp, grinded or 1/4-1/3 tsp or 1/8-1/4 tsp TH Pure Stevia Extract powder)
  • water (hot water - use enough for desired spreading consistency)
Instructions

    Put 1½ quarters softened unsalted butter into a mixing bowl.

    Add 1oz. melted unsweetened chocolate square. Use 2 unsweetened chocolate squares if you like a darker chocolate taste, or the squares may be substituted with ¼ cup unsweetened cocoa powder.

    Grind 5–6 tsp. THM Super Sweet Blend in coffee grinder and add to mixing bowl, or use ¼–⅓ tsp. THM Pure Stevia Extract Powder.

    Beat mixture with electric beater for a few minutes.

    Add a little hot water to thin consistency to more spreadable icing.

    Taste for sweetness and add more ground THM Super Sweet Blend if desired.
