Ingredients

coconut oil spray
1 cup old fashioned rolled oats (left whole)
1 1/2 cups old fashioned rolled oats (ground into flour)
1/4 tsp TH Mineral Salt
2 tsp aluminum-free baking powder
1 tsp baking soda
3/4 cup TH Gentle Sweet (or store-bought, plan-approved sweetener)
1 cup 0% Greek yogurt (or unsweetened applesauce for DF)
1 cup egg white (s) (carton or fresh)
2 tsp TH Natural Burst Vanilla Extract
2 cups frozen peaches (or fresh, diced)

Instructions

Preheat the oven to 350°F. Lightly coat a 12-cup muffin tin or two 8-cup muffin tins with the coconut oil spray.

Pour all the ingredients into a large bowl and blend with a fork—you don’t even need an appliance for this! Spoon the batter into the muffin holes and bake for 20 to 25 minutes, or until a knife inserted in the center comes out clean.
