NOTE: If your blender is not up to the task of pureeing the spinach, just leave it out. You can get a nice green color with a drop or two of liquid chlorophyll, or don’t worry about turning your
pie green.

"JUST GELATIN – You’ll see this ingredient called for in many of our recipes. This refers to the traditional unsweetened powdered gelatin that turns a liquid into a gel. Perhaps you only thought of it as something used to make a jiggly red dessert, but we have so many other wonderful uses for it. Gelatin is a fantastic source of fat-busting protein. It moisturizes and protects the mucosal lining of your intestinal tract, and brings healing to an irritated bowel. It is hydrophilic in nature, which means it attracts water. Hydrophilic foods support proper
digestion and assimilation of your nutrients. Years ago, doctors were advising gelatin consumption for gut healing, rheumatoid arthritis, allergies, and inflammatory bowel disorders.
Don’t buy flavored gelatin (Jell-o or similar products) from your grocery store, however. They are full of dyes and sugar, or artificial sweeteners. Seek out unflavored gelatin, optimally from the bones of grass-fed beef. Grocery store unflavored gelatin (Knox brand) is usually made from pork. It can work in our recipes, but it does not have the same health benefits. If you don’t care about those health benefits, one ¼-ounce packet of unflavored Knox gelatin is about 2 & ½ teaspoons.
