Pearl chats: "Forgive the name, but I needed to grab your attention for this one. So many of us Drive Thru Sue types don’t eat enough salad because the idea of making a side salad seems like too much fuss and bother. It doesn’t have to be." This recipe is found in the "Sides" section of our Trim Healthy Mama Cookbook, on page 229. This is a single-serve recipe.

"This concept is how I keep a lot of salad in my life even though I have at least a 65% Drive Thru Sue nature . The most important thing about salads is the leafy greens. If you’re having meat, you need the vitamin C from the greens to make your meal complete. Also, salads fill your plate so you are not eating an entire plate full of dense, heavy foods – they are the balance to help you find and keep your trim.
So what do you do? You simply rip your lettuce, drop it on your plate, add your dressing and you are done baby! Don’t think that is an inadequate salad. You can have some of our fancier salads for full meals but this is a fantastic way to get more leafy greens in your general life. Don’t even want to bother with the step of ripping? Buy pre washed leafy greens already in salad size. Throw some on your plate, add your dressing. Pat yourself on the back."
