We grew up with this salad. Both our Nana and Mom loved grated beet salads and served them often. This bright pink tasty side always seemed like a special treat on the table. It was just so pretty that even as children we couldn't resist second helpings. This recipe is found in the "Sides" section of our Trim Healthy Mama Cookbook, page 233, and serves one or two people.

"Those of you familiar with the Foxy Mama chapter (chapter 34) in the original Trim Healthy Mama book might want to get excited about beets. This passionate colored veggie is very rich in boron, which is super important in the production of sex hormones. High in B vitamins and iron, beets are also wonder foods for expecting mamas as they support new cell growth during pregnancy and help replenish iron stores. They are also beneficial for those without a bun in the oven, being a powerful liver tonic, a blood purifier, a cancer preventative, and as a natural diuretic, even aid in lowering blood pressure."
