Preheat the oven to 425°F. Spray a 9 × 13-inch baking dish thoroughly with coconut oil.
Put the baby corn in a food processor and process until fully broken down into tiny pieces. Put all the other ingredients in a bowl, add the processed corn, and stir together.
Pour the batter into the baking dish and bake for 25 to 30 minutes.

PEARL CHATS: You don’t nuke this, you bake it, but since I am the Nuke Queen who invented the original FP Nuke Queen's Awesome Bread and this recipe was adapted from that... the name stuck. In Trim Healthy Mama Cookbook, we included an S-style cornbread, but we realized we needed a cornbread that could be a side to E or FP meals. Cornmeal is hard on your blood sugar, so that was out. And we could have used oat flour, but we didn’t want to pile more carbs into your E meals. At last we found a remedy.... the “corniness” in this recipe comes from baby corn, which is a nonstarchy veggie you can find in a can in the Asian section of any grocery store... so fun! Pair this with the Beans 'N' Cornbread on page 111 for a lovely meal. Or put this on the side of any soup or stew.
