Serene chats: “My 5 year old daughter Breeze named this recipe. My little girls think they have gone to heaven and back when I serve them up these mashed taties. You couldn’t find a prettier pink even on the front cover of a Barbie box. But, real men will eat them too especially when they taste every bit as good as cowboy spuds. You don’t have to call them “Princess Taters” in front of your man or any male progeny. Perhaps if you have boys in your house you could call ’em “piglet taters”, as they are the color of a little piggie born on the farm. Stick some turkey or real bacon bits on top and princesses and Barbie dolls will never enter their heads. This recipe is found in the “Sides” section of our Trim Healthy Mama Cookbook. Instructions

  1. Place the whole radishes in a medium saucepan with water to cover. Bring to a boil, cover, and reduce the heat to simmer until they are tender.
  2. Drain and place the radishes in a blender (not a food processor). Add the butter, seasonings, Parmesan, nutritional yeast (if using), 3/4 teaspoon Gluccie, and yogurt or sour cream. Process until smooth. (You may need to do this in two or three batches, but you can put the seasonings in only one batch; sprinkle a little Gluccie into each batch to more evenly distribute it.)
  3. Return the puree to the saucepan and stir well to blend the seasonings while you reheat the mixture. You may even need to sprinkle in another 1/4 teaspoon Gluccie to thicken the mixture, depending on how much yogurt you had added. Taste and adjust the flavors to “own it.”

"Reduce ingredient amounts by thirds, if you only want a couple of servings. Or, make the full batch and freeze any leftovers in baggies  for your own individual sides to quickly heat up or for special lunches for little girls."
