Preheat the oven to its lowest setting (around 170°F) and preferably on a convection setting if you have it. Line 2 large baking sheets with parchment paper or grease 2 large pizza stones.
Mix everything up well with your hands in a large bowl. Spread the mixture super thin by squishing and spreading it flat with your hands on the baking sheets or stones.
Bake all night (7 to 8 hours). In the morning, flip the sheets of jerky and keep baking another 3 to 4 hours, or until the jerky is incredibly crispy. Turn the oven off and let the jerky cool inside the turned-off oven.
Break the jerky up into snack bar–size pieces. Store in zippy bags in the freezer for the long term. This keeps them super crispy and yumzers.

Intro continued.....It is quirky because the texture is a little different from regular
jerky since it is slow-baked rather than dried, but we’ve grown to prefer this sort of jerky now. If you have to rush off to work in the mornings, it is best to make this on the weekend or on your days off, as it has a long, low bake time. Go ahead and throw a couple pieces into your purse in a baggie for true nourishment and satiety while out and about, or dip a piece or two in your favorite on-plan dip like Kickin’ Dippin’ Sauce (page 518). We call this the perfect natural snack!
