Put the gelatin and the 2 tablespoons cool water in a 1-cup measuring cup and stir until the gelatin dissolves. Add the boiled water and stir again. Add enough cool water to come to the 1-cup line, then pour into a blender.
Add the garlic, salt, black pepper, onion powder, vinegar, mustard, lecithin, MCT oil, and collagen. Trimmy it up with a good blend. Add the whey protein and blend for 3 to 5 seconds more. Turn the blender off and gently stir in the yogurt, herbs, and green onions. Pour into a jar. This dressing can be used immediately, but it has the best texture after being refrigerated for a day to let the gelatin thicken properly.

DF Friendly (Dairy Free folks can replace the yogurt with a large Hass avocado and a squeeze of lemon juice and or a Tablespoon or 2 of baobab powder, the avocado version will of course be an S. Also omit the whey protein.)
