Put the gelatin in a mug, pour in the 2 tablespoons cool water, and stir to dissolve, then add the boiled water and stir again. Set aside.
In a blender, combine the 2 cups plus 2 tablespoons water, the lemon juice, turmeric, vanilla, sweetener, salt, baobab powder, collagen, lecithin, MCT oil, and coconut milk (if using) and whiz. Turn the blender to low and while it is whizzing, add the gelatin mixture. Blend for a few seconds, then add the whey protein and blend for about 10 more seconds. Pour into ice pop molds and freeze until solid.

VARIATION SINGING CANARY SHERBET:
To make a sherbet, pull the collagen back to 1 teaspoon and the whey protein to just 2 tablespoons. Follow the same directions, but pour into ice cube trays and freeze until solid. When ready to make your sherbet, process the cubes in a food processor until a yellow snow forms. For S, add 2 tablespoons full-fat coconut milk or cream; for FP, add unsweetened coconut, cashew, or almond milk. Process to sherbet consistency.
