Preheat the oven to 350°F.

Combine the ground oats in a blender with the cottage cheese, egg whites, baking powder, and seasonings. Stir in the salsa.

Coat a 9 × 13-inch shallow baking pan with coconut oil cooking spray or line the pan with parchment. Pour the batter into the pan so it covers the entire space. Bake for 20 minutes. After the first 5 to 8 minutes, prick the bread with a fork to release any air bubbles.

Let cool briefly, then cut into desired pieces.

Makes 3 official E servings or up to 1/3 of the batch for each serving. That means you’ll cut the pan bread into 6 super large pieces of bread and use 2 pieces for a really big, filling E sandwich. Or cut the bread into 8 or 10 slices which will give you 4 to 5 servings for more medium-sized sandwiches, but be sure to have some fruit on the side for extra needed E fuel.
