From page 383, "Don’t think for a minute that this cake ends up tasting like beans. You cannot taste any beaniness, only a lovely flavor and texture. It’s moist and delicious and put together in a jiffy. Variations of this bean cake have been flying around books and internet sites for many years, but the South Beach diet people made it most famous. They cannot take full acclaim though as Japanese cuisine used beans as a base to their desserts for thousands of years. You may wonder how we can use beans and still call this an S recipe. Beans are a slow burning carbohydrate and full of resistant starch, which actually hinders blood sugar from spiking. Using the recipe outlined below, and cutting the cake into nine generous servings, will make each piece about 6 net carbs. We don’t want you to be worried about carb counting, but this puts your mind at ease. This recipe is well within S limits. Because we count S helpers at around 15 carbs, a serving of this recipe is less than half the limit."

Icing for Cake – S (Pearl’s Quick Version)
1. Put 1½ quarters softened unsalted butter into a mixing bowl.
2. Add 1 oz. melted unsweetened chocolate square. Use 2 unsweetened chocolate
squares if you like a darker chocolate taste, or the squares may be substituted with ¼
cup unsweetened cocoa powder.
3. Grind 5–6 tsp. TH Sweet Blend in coffee grinder and add to mixing bowl, or use
¼–⅓ tsp. TH Pure Stevia Extract Powder.
4. Beat mixture with electric beater for a few minutes.
5. Add a little hot water to thin consistency to more spreadable icing.
6. Taste for sweetness and add more ground TH Sweet Blend if desired.
