Cream the butter and sweetener together in a bowl.
Add the egg yolk and vanilla and beat until thoroughly combined.
Then add the almond flour, Baking Blend, and salt.
Mix until combined. Form the dough into a ball and chill for at least an hour.
Line a cookie sheet with parchment paper and lightly spray with coconut oil cooking spray.
Roll out the dough between two pieces of parchment paper and cut out shapeswith cookie cutters.
Put the cut-out cookies on the cookie sheet and bake for 12-15 minutes at 350degrees or until lightly golden on the sides.
Remove from heat and do not touch until fully cooled.
