Preheat the oven to 350°F. Spray two 9 × 5-inch loaf pans with coconut oil.
Make the “cauli snow.” Put the frozen cauliflower in a blender (not a food processor) and pulse until it is broken down. Then blend on a low setting until it turns into a powdery white snow (don’t add any water, just keep blending until it is complete powder snow . . . no rice-size pieces left). Measure out 1 cup for this recipe. (Put the leftover cauli snow in a baggie in the fridge for the next time or back into the freezer if you think it will be a while before you bake with cauli snow again.)
Put the cauli snow in a bowl. Add all the other ingredients and mix well. Divide the batter between the loaf pans and bake for 40 to 45 minutes, until just done on top. Allow to cool in the pans, then carefully remove.

SERENE CHATS: FYI - these loaves are not supposed to rise high in your pans; they are more the size of brownies in a loaf pan. The batter is very moist, so it’s much better to use two loaf pans rather than one.

Hello!! I have enjoyed a different version of your Sweet Flower Bread in Trim Healthy Table page 255. I love chocolate and this reminds me of a healthy version of chocolate bread that they used to carry at Starbucks.
