Thousand Island Trimmy Dressing (FP or S)

"Thousand Island Trimmy Dressing" Unbelievably, yes . . . a creamy Thousand Island dressing that is an FP! Depending upon the amount used this recipe can be used as an FP or an S. This recipe is found in the "Sauces, Dressings, Dips & Other Odds and Ends~Salad Dressings" Chapter, on page 529 of the Trim Healthy Table Cookbook.

  1. Put the gelatin and the 2 tablespoons cool water into a 1-cup measuring cup and stir to dissolve. Add the boiled water and stir again. Add enough cool water to come up to 1 cup. Pour this gelatin/water mix into a blender and blend for a few seconds.

  1. Add the mct oil, tomato paste, vinegar, sweetener, salt, black pepper, collagen, and lecithin and Trimmy to perfection with a nice blend. Pour into a jar and add the onion and pickles.
