Put the gelatin and the 2 tablespoons cool water into a 1-cup measuring cup and stir to dissolve. Add the boiled water and stir again. Add enough cool water to come up to 1 cup. Pour this gelatin/water mix into a blender and blend for a few seconds.
Add the mct oil, tomato paste, vinegar, sweetener, salt, black pepper, collagen, and lecithin and Trimmy to perfection with a nice blend. Pour into a jar and add the onion and pickles.
