Preheat oven to 350°F
Whisk together butter (or coconut oil and a pinch of salt for DF) and the egg with optional extracts.
Add Cookie Mix and stir well. Fold in desired plan-approved additions.
Drop by rounded tablespoons onto a parchment-lined cookie sheet or silicone cookie mat and roll the dough into balls. Flatten slightly with your hand or small piece of parchment
paper.
Bake at 350°F for 8-12 minutes.
Makes 12 Cookies
One packet of mix makes two batches of cookies.
Double the ingredients to make 24 cookies.
This mix is gently sweetened. You may want to add extra sweetener (to taste) if you prefer a sweeter cookie.
