These taste every bit as good if not better than the master recipe of Trim Healthy Pancakes, but it is especially important to use coconut oil cooking spray and a nonstick griddle or they will stick. These pancakes are thinner than the others, but their wonderful taste makes up for their lack of fluff. Instructions

  1. Blend the oats as instructed, then add all the other ingredients. Allow the mixture to thicken in the fridge for 15 minutes before using, or make up the batter the night before.
  2. Coat an electric nonstick griddle with coconut oil spray and heat to 250°F. These must start off at a low temperature to cook all the way through. Pour the pancake batter onto the griddle and cook for 3 minutes, then turn the temperature up to 275°F. Cook the pancakes until golden brown on the first side, another 2 to 3 minutes. Flip and brown on the other side, another couple of minutes, but don’t take the pancakes off the heat too early—these pancakes take a total of 9 to 10 minutes to cook. It may take a little practice to get these right, but they are worth it.
