We had a feeling you’d love the loaf version of WWBB (page 242) enough that you’d ask us for a single serve. Here it is. This is a single-serve recipe. This recipe is found in the "Breads, Wraps, Biscuits, and Loaves" section, on page 244 of the Trim Healthy Table Cookbook.

Put the egg whites and xanthan gum in a small bowl and blend for about 1 minute with a stick blender or put in a mini blender. Add the whey protein, Baking Blend, yogurt, baking powder, salt, and sweetener and stir in with a fork, or blend until well combined.

Spray a small slice of bread-size Pyrex (round or square) dish with coconut oil (don’t use a mug . . . it doesn’t work for this recipe). Scrape the batter into the dish and microwave it for 1 minute 50 seconds. Remove and slice it into 2 thin pieces of bread.

PEARL CHATS: Yes, it is microwaved so it doesn’t quite have all the splendor of the full baked loaf, but it is still reasonably wonderful for a quick fix. Serene’s sitting here grumbling about all this microwave “bidness,” but she’ll just have to get over it.
