Preheat a waffle iron and spray it with coconut oil.

Measure out ¼ cup of the oats and set aside. Grind the remaining 1 cup oats to a flour in a blender. Mash the banana in a bowl, then add the ground oats, whole oats, and remaining waffle ingredients and stir together.

Scoop the batter into each waffle square and cook according to the manufacturer’s instructions.
