  1. It helps save time to have the waffles made ahead and frozen, then all you have to do is thaw them—but if not, make them fresh. Make the pancake syrup (or find a store-bought sugar-free pancake syrup without maltitol). Set aside.
  2. Cook the bacon on a large griddle until crisp.
  3. Melt the butter in a large skillet over medium heat. Add the whole eggs and egg whites, sprinkling with salt and pepper to taste, and whisk in the skillet. Cook, whisking frequently, until the eggs start to set and thicken. Once they are very close to done, remove the skillet from the heat, add the water, and whisk well into the eggs, until the soft heat from the still-hot pan finishes them. Finally stir in the grated cheese and Nutritional Yeast.
