Instructions

  1. Put all the ingredients (except the Gluccie and peas) in a crockpot and stir. Cover and cook on low for 7 to 8 hours.
  2. During the last half hour, take out about 1½ cups of the broth and place it in a blender with the 2 teaspoons Gluccie. Blend well for about 1 minute, holding the lid on tightly. Vent hot air. Let the blender rest for 30 seconds, then seal again and blend for another minute. Return the thickened broth to the crockpot. Add the peas and cook for another 15 minutes. If the gravy doesn’t get quite as thick as you like it, take a little more of the broth out, add another ¼ teaspoon of Gluccie to it, and blend again. Taste and adjust the flavors to “own it!”

ELECTRIC PRESSURE COOKER DIRECTIONS: Add all the ingredients (except the Gluccie and peas) to a pressure cooker. Seal and cook at high pressure for 35 minutes. Use natural pressure release. Add the peas to soften in the piping hot sauce and follow the directions in the crockpot version to thicken the gravy with Gluccie.

NOTE: This recipe was created and tested using a 6-quart Instant Pot. If you are using a different brand or different size electric pressure cooker, consider modifying the recipe as your results may vary from ours. Example: If you are using an 8-quart, consider adding more liquid as the larger circumference often needs more liquid to come to pressure.

MAKE A FAMILY MEAL:

  • For the weight-loss plan, make up some Fifteen-Minute Focaccia Bread (page 247) and put it on the side of this stew . . . mmmm, or eat the stew ladled over Mashed Fotatoes (page 264).
  • Growing children can have a healthy carb on the side, such as buttered sprouted-grain bread or whole milk, or they can enjoy their stew over regular mashed potatoes.
