Instructions

  1. Melt the coconut oil in a microwave-safe mug. Stir the almond milk and vanilla into the melted coconut oil.
  2. Mix the dry ingredients well in a small bowl. Add the dry ingredients to the wet ingredients in the mug and mix thoroughly. Stir in the chocolate chips (if using).
  3. Microwave for 35 to 45 seconds. It should puff up a bit, but still look a bit undercooked. It may take your microwave a tad longer, but don’t go more than 1 minute. You are shooting for molten-lava-cake-type texture in the middle.
